1cupAlfredo sauce
4largeFlour tortillas
1cupShredded mozzarella cheese
1/2cupBreadcrumbs
2largeEggs, beaten

Instructions
Pat the peeled and deveined shrimp dry with paper towels. Season with salt and pepper.
Heat a pan over medium heat, adding a touch of oil. Sauté the shrimp for 2–3 minutes per side until pink and cooked through. Remove from heat and let them cool, then chop into small pieces.
In a bowl, combine chopped shrimp with Alfredo sauce and shredded mozzarella. Mix well.
Lay out the tortillas. Evenly divide the shrimp mixture onto the center of each tortilla, then fold in the sides and roll tightly into burritos. Cut each burrito into 2–3 bite-sized pieces.
Set up a breading station: one shallow bowl with beaten eggs, another with breadcrumbs.
Carefully dip each burrito bite first into the egg mixture, then roll in breadcrumbs until fully coated.
In a deep pan or fryer, heat oil to 350°F (175°C). Fry the burrito bites in batches for about 2–3 minutes per side, or until golden and crispy. Use a slotted spoon to remove to a paper towel-lined plate.
Serve hot, and enjoy that first cheesy, shrimp-filled crunch!
Notes
For extra flavor, stir fresh chopped parsley or a touch of Parmesan into the Alfredo-shrimp mixture. You can also bake these bites at 400°F for a healthier option.
