  • 4 pieces Boneless, skinless chicken breasts or thighs
  • 1 can (20 oz) Pineapple chunks in juice, undrained
  • 1 cup BBQ sauce
  • 1 clove Garlic, minced (optional)
  • 1 small Onion, finely diced (optional)
  • Salt and pepper to taste
  • Fresh cilantro or green onion for garnish (optional)

Instructions

  • Place the chicken breasts or thighs in the bottom of your crockpot. Season lightly with salt and pepper.
  • Pour the entire can of pineapple chunks, including the juice, evenly over the chicken.
  • Add the BBQ sauce on top and spread it gently. If using garlic and onion, sprinkle them over now.
  • Cover and cook on low for 6–7 hours or high for 3–4 hours, until chicken is tender and fully cooked.
  • Remove chicken and shred it with two forks, then mix it back into the sauce.
  • Garnish with fresh cilantro or sliced green onions before serving.

Notes

Store leftovers in an airtight container in the refrigerator for up to 3 days. Reheat in the microwave or on the stovetop over low heat, adding a splash of water or BBQ sauce if it thickens too much.
