4piecesBoneless, skinless chicken breasts or thighs
1can (20 oz)Pineapple chunks in juice, undrained
1cupBBQ sauce
1cloveGarlic, minced (optional)
1smallOnion, finely diced (optional)
Salt and pepper to taste
Fresh cilantro or green onion for garnish (optional)
Instructions
Place the chicken breasts or thighs in the bottom of your crockpot. Season lightly with salt and pepper.
Pour the entire can of pineapple chunks, including the juice, evenly over the chicken.
Add the BBQ sauce on top and spread it gently. If using garlic and onion, sprinkle them over now.
Cover and cook on low for 6–7 hours or high for 3–4 hours, until chicken is tender and fully cooked.
Remove chicken and shred it with two forks, then mix it back into the sauce.
Garnish with fresh cilantro or sliced green onions before serving.
Notes
Store leftovers in an airtight container in the refrigerator for up to 3 days. Reheat in the microwave or on the stovetop over low heat, adding a splash of water or BBQ sauce if it thickens too much.
