Meatloaf Ingredients

  • 2 pounds ground beef
  • 1 packet French onion soup mix
  • 1 cup breadcrumbs
  • 1/2 cup milk
  • 2 large eggs, beaten
  • 1/4 cup ketchup
  • 1 tablespoon Worcestershire sauce
  • 1 cup caramelized onions
  • 1 cup Swiss cheese, sliced
  • to taste Fresh thyme, for garnish

Instructions

  • In a large bowl, combine the ground beef, French onion soup mix, breadcrumbs, milk, beaten eggs, ketchup, and Worcestershire sauce. Mix everything until well combined.
  • Line your crockpot with parchment paper or foil for easy removal.
  • Press half of the meat mixture into the bottom of the crockpot.
  • Layer the caramelized onions and half of the Swiss cheese on top.
  • Add the rest of the meat mixture, pressing it gently to seal the edges.
  • Cover and cook on low for 6 hours or on high for 4 hours.
  • In the last 10 minutes, sprinkle the remaining Swiss cheese on top and cover until melted.
  • Garnish with fresh thyme and serve warm.

Notes

For best results, use homemade caramelized onions. You can also experiment with different cheeses like provolone or cheddar for a unique flavor.
