Ingredients

Beef Ingredients

  • 2 pounds beef tips or stew meat, cut into 1-inch pieces

Vegetable Ingredients

  • 1 medium onion, chopped
  • 2 cloves garlic, minced

Liquid Ingredients

  • 1 cup beef broth
  • 1 tablespoon Worcestershire sauce
  • 1 tablespoon soy sauce
  • 1 teaspoon dried thyme

Seasoning Ingredients

  • to taste Salt
  • to taste black pepper

Thickening Ingredients

  • 1 cup sour cream
  • 2 tablespoons all-purpose flour
  • 1/4 cup water

Pasta Ingredients

  • 12 ounces egg noodles, cooked and drained

Garnish

  • to taste fresh parsley, chopped for garnish

Instructions

  • Start by placing the beef tips, chopped onion, and minced garlic into your crockpot.
  • In a small bowl, whisk together the beef broth, Worcestershire sauce, soy sauce, thyme, salt, and pepper.
  • Pour this mixture over the beef in the crockpot.
  • Cover the crockpot and cook on low for 7-8 hours or on high for 4 hours, until the meat is nice and tender.
  • In the last 30 minutes of cooking, whisk together the sour cream, flour, and water until it’s smooth.
  • Stir this mixture into the crockpot to thicken the sauce.
  • Once ready, serve the beef tips over cooked egg noodles and garnish with fresh parsley.

Notes

Store any leftovers in an airtight container in the fridge for up to 3 days. You can also freeze it for up to 3 months. Just make sure to let it cool down before freezing.
