  • 2 lbs Yellow Potatoes Scrubbed and quartered
  • 0.5 cup Yellow Onion Diced
  • 12 oz Smoked Sausage Sliced
  • 2 cans (14.5 oz each) Cut Green Beans Drained
  • 1 stick (1/2 cup) Unsalted Butter Whole stick, room temperature is fine
  • 1 packet (0.6 oz) Italian Dressing Seasoning Mix
  • 1 tsp Salt
  • 0.5 tsp Black Pepper
  • 1 tsp Garlic Powder
  • 1 tsp Onion Powder
  • 1 tsp Smoked Paprika Or regular paprika

Instructions

  • Build the Base: Place the quartered potatoes into the bottom of your slow cooker. Sprinkle with salt, pepper, garlic powder, onion powder, and smoked paprika. Add in the diced onions and give everything a quick toss to coat. Make sure the potatoes are spread in an even layer so they cook uniformly.
  • Layer It Up: Top the potatoes with sliced smoked sausage. Arrange the sausage so it covers the potatoes evenly. Add the drained green beans over that, then sprinkle the Italian dressing seasoning evenly across the surface.
  • Add the Butter: Place the full stick of butter right on top of the layers — no need to stir. The butter will melt during cooking and distribute flavor throughout the dish.
  • Let It Slow Cook: Cover and cook on Low for 6–7 hours or High for 3–4 hours until the potatoes are fork-tender and the flavors have blended beautifully.
  • Serve & Enjoy: Gently stir everything together before serving to mix in all that buttery flavor. Serve warm, as-is, or with a slice of crusty bread to soak up the juices.
