Instructions
Start by preparing the apple filling. In a medium mixing bowl, combine the finely chopped Granny Smith apples, granulated sugar, cornstarch, ground cinnamon, lemon juice, and vanilla extract. Stir well so every apple piece gets coated.
Lay out your wonton wrappers on a clean, dry surface. Keep a small bowl of water nearby.
Place about 1 teaspoon of the apple mixture in the center of each wonton wrapper.
Dip your finger in water and moisten the edges of the wrapper. Gently fold the wrapper over the filling into a triangle (or a rectangle, if you prefer a mini-pastry look), and press the edges to seal well. Make sure there are no gaps, so the filling won’t leak during frying.
In a deep skillet or saucepan, heat vegetable oil over medium-high heat (about 350°F, or when a small piece of wrapper sizzles and floats up immediately).
Fry wontons, a few at a time, until golden brown—about 1-2 minutes per side. Use a slotted spoon to remove and let them drain on a paper towel-lined plate.
While still warm, dust the apple pie bites generously with powdered sugar.
