Instructions
Preheat your oven to 425°F (220°C). Line a baking sheet with parchment paper or lightly spray it with olive oil.
Prepare the zucchini by washing and drying them, then cutting both into fry-shaped sticks, about 3-4 inches long and 1/2 inch thick.
Place the flour in a shallow bowl. In another shallow bowl, beat the eggs. In a third bowl, combine panko breadcrumbs, grated Parmesan, garlic powder, paprika, salt, and black pepper.
Working in batches, dip each zucchini stick first into the flour (shaking off any excess), then into the beaten eggs, and finally coat them in the breadcrumb-Parmesan mixture. Ensure each stick is generously coated.
Arrange the coated fries in a single layer on the prepared baking sheet, spacing them out so they crisp up instead of steaming.
Lightly spray the tops of the fries with olive oil spray to help them get extra crispy.
Bake in the preheated oven for 20-25 minutes, flipping halfway through, until the fries are golden brown and crisp.
Remove from the oven, let cool slightly, and serve immediately with your favorite dipping sauce.
Notes
Store leftovers in an airtight container in the refrigerator for up to 2 days. For reheating, bake at 375°F (190°C) for about 8-10 minutes.
