Ingredients

Zucchini Fries

  • 2 medium Zucchinis Cut into fries
  • 1/2 cup All-purpose flour
  • 2 large Eggs Beaten
  • 1 cup Panko breadcrumbs
  • 1/2 cup Grated Parmesan cheese
  • 1 teaspoon Garlic powder
  • 1/2 teaspoon Paprika
  • to taste Salt and black pepper
  • as needed Olive oil spray

Instructions

  • Preheat your oven to 425°F (220°C). Line a baking sheet with parchment paper or lightly spray it with olive oil.
  • Prepare the zucchini by washing and drying them, then cutting both into fry-shaped sticks, about 3-4 inches long and 1/2 inch thick.
  • Place the flour in a shallow bowl. In another shallow bowl, beat the eggs. In a third bowl, combine panko breadcrumbs, grated Parmesan, garlic powder, paprika, salt, and black pepper.
  • Working in batches, dip each zucchini stick first into the flour (shaking off any excess), then into the beaten eggs, and finally coat them in the breadcrumb-Parmesan mixture. Ensure each stick is generously coated.
  • Arrange the coated fries in a single layer on the prepared baking sheet, spacing them out so they crisp up instead of steaming.
  • Lightly spray the tops of the fries with olive oil spray to help them get extra crispy.
  • Bake in the preheated oven for 20-25 minutes, flipping halfway through, until the fries are golden brown and crisp.
  • Remove from the oven, let cool slightly, and serve immediately with your favorite dipping sauce.

Notes

Store leftovers in an airtight container in the refrigerator for up to 2 days. For reheating, bake at 375°F (190°C) for about 8-10 minutes.
