Instructions
Wash and trim the woody ends off the asparagus spears. Pat dry with a paper towel.
Place flour in the first shallow bowl, beaten eggs in the second, and in a third bowl, combine panko breadcrumbs, grated Parmesan, garlic powder, salt, and black pepper.
Roll each asparagus spear in the flour until lightly coated, dip into the beaten eggs, then coat thoroughly with the Parmesan-panko mixture. Press gently to help the coating stick.
Preheat your oven to 425°F (220°C). Line a baking sheet with parchment paper or lightly grease it. Place the coated asparagus sticks on the sheet in a single layer. Spray lightly with cooking spray or drizzle with olive oil.
Bake for 12-15 minutes until the coating is golden brown and crispy. Flip halfway through for even crisping.
