Instructions
Preheat your oven to 400°F (200°C). Line a baking sheet with parchment paper or a silicone baking mat.
In a medium mixing bowl, combine the cottage cheese, grated Parmesan cheese, garlic powder, onion powder, dried herbs, salt, and pepper. Stir until all ingredients are thoroughly mixed.
Using a spoon or a small ice cream scoop, drop small mounds of the cheese mixture onto the prepared baking sheet, spacing them about 2 inches apart.
Gently flatten each mound with the back of the spoon to form thin rounds.
Lightly spray the tops of each chip with cooking spray or brush with olive oil.
Bake in the preheated oven for 15-20 minutes, or until the chips are deeply golden around the edges and feel crisp to the touch.
Remove from the oven and let the chips sit on the baking sheet for a few minutes, then transfer to a wire rack to cool completely.
