Instructions
Peel and grate the potatoes. Squeeze out as much moisture as possible using a clean towel.
In a large mixing bowl, combine grated potatoes, corn, cheddar cheese, onion, eggs, flour, salt, and pepper. Mix until well combined.
Heat a layer of vegetable oil in a skillet over medium heat.
Form 2-tablespoon scoops of the mixture into patties and flatten slightly.
Fry the fritters in batches for 2–3 minutes per side, or until golden and crispy.
Transfer to a paper towel-lined plate to drain. Serve warm with your favorite dipping sauce.
