  • 3 medium Potatoes, peeled and grated (about 450g / 1 lb)
  • 1 cup Corn kernels (fresh, frozen, or canned)
  • 100 g Shredded cheddar cheese (about 1 cup)
  • 1 small Onion, finely chopped
  • 2 large Eggs
  • 1 tablespoon All-purpose flour
  • to taste Salt
  • to taste Black pepper
  • as needed Vegetable oil for frying

Instructions

  • Peel and grate the potatoes. Squeeze out as much moisture as possible using a clean towel.
  • In a large mixing bowl, combine grated potatoes, corn, cheddar cheese, onion, eggs, flour, salt, and pepper. Mix until well combined.
  • Heat a layer of vegetable oil in a skillet over medium heat.
  • Form 2-tablespoon scoops of the mixture into patties and flatten slightly.
  • Fry the fritters in batches for 2–3 minutes per side, or until golden and crispy.
  • Transfer to a paper towel-lined plate to drain. Serve warm with your favorite dipping sauce.

Notes

Try mixing in chopped jalapeños or herbs for extra flavor. For a lighter option, bake the fritters at 400°F (200°C) for 20–25 minutes, flipping halfway through.
