Cracker Coating

Instructions
Preheat your oven to 375°F (190°C).
Crush the Ritz crackers into fine crumbs using a rolling pin or your hands.
Mix the shredded cheddar cheese with the cracker crumbs in a large bowl.
Season the chicken with salt and pepper.
Dip each piece of chicken into the melted butter, then roll it in the cracker and cheese mixture. Press gently to coat well.
Place the coated chicken in a greased baking dish. Drizzle any remaining butter over the top.
Bake for 30-35 minutes or until the chicken is cooked through and the crust is golden and crispy.

Notes
Store leftovers in an airtight container in the fridge for up to 3–4 days. To reheat, bake in a preheated oven at 350°F (175°C) for 10–15 minutes until the crust is crispy again.
