Chicken

  • 4 pieces boneless, skinless chicken breasts

Breading Mixture

  • 1 cup all-purpose flour
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1 teaspoon paprika
  • to taste salt
  • to taste pepper
  • 2 large eggs, beaten
  • 2 cups breadcrumbs
  • 1/2 cup butter

Instructions

  • Start by flattening the chicken breasts to an even thickness using a meat mallet. This helps them cook evenly.
  • In a shallow dish, mix together the flour, garlic powder, onion powder, paprika, salt, and pepper.
  • Next, dip each chicken breast into the flour mixture then into the beaten eggs. Finally, coat them with breadcrumbs.
  • Heat the butter in a large skillet over medium heat.
  • Fry the chicken breasts for about 4-5 minutes on each side, or until they are golden brown and fully cooked.
  • Remove the chicken from the skillet and let it drain on paper towels to get rid of any excess butter.
  • Serve your crispy chicken hot, and add a sprinkle of fresh parsley if you like.

Notes

Make sure the butter is hot before adding the chicken for the best crunch. Use a meat thermometer to check that the chicken has reached 165°F for safety. Try not to overcrowd the skillet; cook in batches if needed.
