  • 2 cups broccoli florets, finely chopped Squeeze out excess moisture after chopping.
  • 1 cup shredded cheddar cheese
  • 1/2 cup breadcrumbs Can use gluten-free breadcrumbs.
  • 2 large eggs
  • 1/4 cup grated Parmesan cheese
  • 1/4 cup finely chopped onion
  • 1 clove garlic, minced
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/4 teaspoon smoked paprika Can substitute with regular paprika or cayenne.
  • as needed Non-stick cooking spray For coating the baking sheet and bites.

Instructions

  • Preheat your oven to 375°F (190°C). Line a baking sheet with parchment paper and lightly coat it with non-stick spray.
  • In a large mixing bowl, combine the chopped broccoli, shredded cheddar, breadcrumbs, eggs, grated Parmesan, onion, garlic, salt, pepper, and smoked paprika. Mix until everything is evenly blended and the mixture starts to hold together.
  • Scoop about 1 tablespoon of the mixture for each bite and gently shape into small balls. Arrange them evenly on the prepared baking sheet, spacing the bites about an inch apart for even cooking.
  • Spray the tops of the bites lightly with non-stick cooking spray. This step is key for achieving extra crispiness as they bake.
  • Place the baking sheet in your preheated oven and bake for 20 to 25 minutes, or until the bites are beautifully golden brown and crisp on the edges. Rotate the sheet halfway through for even browning.
  • Let the bites cool for a minute or two before transferring to a serving plate. Enjoy them warm, either as a snack, a lunchbox treat, or crowd-pleasing party finger food.

Notes

Store leftovers in an airtight container in the refrigerator for up to 3 days. Reheat in a preheated oven at 350°F for 5-8 minutes.
