  • 1 pound Italian sausage, casing removed
  • 1 tablespoon olive oil
  • 1 small onion, chopped
  • 2 cloves garlic, minced
  • 4 cups chicken broth
  • 1 can (14.5 oz) diced tomatoes
  • 1 cup heavy cream
  • 1 cup grated Parmesan cheese
  • 2 cups baby spinach
  • 1 teaspoon Italian seasoning
  • Salt and pepper to taste

Instructions

  • Heat olive oil in a large pot over medium heat. Add Italian sausage and cook until browned, breaking it up with a spoon. Drain excess fat if necessary.
  • Add chopped onion and minced garlic to the pot. Cook until onion is translucent, about 3-4 minutes.
  • Pour in the chicken broth and diced tomatoes. Bring to a simmer.
  • Stir in heavy cream, grated Parmesan cheese, and Italian seasoning. Simmer for 10 minutes, stirring occasionally.
  • Add baby spinach and cook until wilted, about 2 minutes.
  • Season with salt and pepper to taste. Serve hot.

Notes

For a thicker soup, mix 1 tablespoon of cornstarch with 1 tablespoon of water and add it while simmering. Try using spicy Italian sausage for extra heat or swap spinach for kale.
