  • 1 1/2 cups Beef Broth
  • 1 cup Heavy Cream
  • 1/2 cup Sour Cream
  • 1/4 cup Parmesan Cheese freshly grated

Instructions

  • 1. Cook the Tortellini: Boil cheese tortellini according to package instructions until just al dente. Drain and set aside, reserving 1/2 cup of the pasta water in case you need to thin the sauce later.
  • 2. Brown the Ground Beef: In a large skillet over medium-high heat, add olive oil. When hot, add ground beef and cook, breaking it into small crumbles, until browned (about 5-7 minutes). Drain excess fat if needed.
  • 3. Sauté the Aromatics: Stir in the diced onion and minced garlic. Sauté for 2-3 minutes until the onions are soft and everything is fragrant.
  • 4. Season the Beef: Sprinkle in the paprika, ground mustard, black pepper, and salt. Toss to coat the beef and infuse it with flavor.
  • 5. Add the Liquids: Pour in the beef broth. Use your spoon to scrape up any delicious browned bits from the bottom of the pan. Let simmer for 2-3 minutes to let the flavors blend and the broth reduce slightly.
  • 6. Create the Sauce: Reduce the heat to medium-low. Stir in the heavy cream and sour cream, mixing until smooth and creamy. Simmer for another 3-4 minutes, letting the sauce thicken.
  • 7. Combine with Tortellini: Tip in the cooked tortellini. Stir gently to coat every piece with the creamy sauce. If the sauce seems too thick, add a splash of the reserved pasta water until it reaches your preferred consistency.
  • 8. Finish the Dish: Sprinkle over the freshly grated Parmesan and fold it in until melted through. Garnish with fresh parsley for a burst of color and serve immediately while it’s hot and bubbling.
