Instructions
Pat the ribeye steaks dry with paper towels. Season both sides generously with salt and pepper to taste. Let them sit at room temperature for 15 minutes for even cooking.
Heat a grill pan or outdoor grill over high heat. Brush each steak lightly with olive oil. Place the steaks on the hot grill and cook for 3-4 minutes per side for medium-rare, or until desired doneness. Remove the steaks from the grill and let them rest under foil for 5 minutes.
In a small skillet, melt the butter over medium heat. Add minced garlic and sauté for 1 minute until fragrant but not browned. Pour in the heavy cream and bring to a gentle simmer. Whisk in the grated Parmesan and continue cooking for 2-3 minutes until the sauce thickens. Stir in the fresh thyme.
Slice the rested steak and arrange on plates. Spoon generous amounts of creamy garlic sauce over the top. Sprinkle with fresh parsley and extra Parmesan, if desired.
