Equipment

  • Grill Pan
  • Skillet
  • Meat Thermometer

Ingredients

Steak Ingredients

  • 2 pieces Ribeye Steaks Well-marbled for juiciness
  • to taste Salt
  • to taste Pepper
  • 2 tablespoons Olive Oil

Sauce Ingredients

  • 1/2 cup Heavy Cream
  • 1 tablespoon Butter
  • 3 cloves Garlic Minced
  • 1/4 cup Grated Parmesan Cheese
  • 1 teaspoon Fresh Thyme Leaves
  • to taste Fresh Parsley For garnish

Instructions

  • Pat the ribeye steaks dry with paper towels. Season both sides generously with salt and pepper to taste. Let them sit at room temperature for 15 minutes for even cooking.
  • Heat a grill pan or outdoor grill over high heat. Brush each steak lightly with olive oil. Place the steaks on the hot grill and cook for 3-4 minutes per side for medium-rare, or until desired doneness. Remove the steaks from the grill and let them rest under foil for 5 minutes.
  • In a small skillet, melt the butter over medium heat. Add minced garlic and sauté for 1 minute until fragrant but not browned. Pour in the heavy cream and bring to a gentle simmer. Whisk in the grated Parmesan and continue cooking for 2-3 minutes until the sauce thickens. Stir in the fresh thyme.
  • Slice the rested steak and arrange on plates. Spoon generous amounts of creamy garlic sauce over the top. Sprinkle with fresh parsley and extra Parmesan, if desired.
  • Pair with your favorite sides and enjoy while everything’s hot and freshly made!

Notes

For a lighter sauce, substitute half-and-half for cream and reduce Parmesan to your preference. Make the sauce right before serving for best results.
