  • 2 pieces Boneless, skinless chicken breasts
  • 6 slices Smoked bacon
  • 12 oz Pasta (fettuccine or penne)
  • 1 cup Heavy cream
  • 0.5 cup Grated Parmesan cheese
  • 3 cloves Garlic, minced
  • 1 small Onion, finely chopped
  • 1 tbsp Olive oil
  • to taste Salt
  • to taste Pepper
  • optional Fresh parsley or basil for garnish

Instructions

  • Season the chicken breasts with salt and pepper. Heat olive oil in a skillet and cook the chicken for 5-7 minutes per side until golden and fully cooked. Let it rest before slicing into strips.
  • In a large pot of salted boiling water, cook pasta according to package instructions until al dente. Drain and set aside.
  • In the same skillet, cook the bacon until crispy. Remove, drain on paper towels, then chop into small pieces.
  • Using the leftover bacon fat, sauté onions and minced garlic until fragrant. Add heavy cream and bring to a gentle simmer. Stir in Parmesan cheese until the sauce thickens.
  • Add the cooked pasta, chicken, and bacon into the sauce. Toss everything together until well coated. Heat through before serving.
  • Garnish with fresh parsley or basil, and serve hot with garlic bread or a fresh salad.

Notes

For a lighter version, use half-and-half instead of heavy cream and turkey bacon instead of regular bacon. Add spinach, bell peppers, or zucchini for extra veggies.
