Instructions
Season the chicken breasts with salt and pepper. Heat olive oil in a skillet and cook the chicken for 5-7 minutes per side until golden and fully cooked. Let it rest before slicing into strips.
In a large pot of salted boiling water, cook pasta according to package instructions until al dente. Drain and set aside.
In the same skillet, cook the bacon until crispy. Remove, drain on paper towels, then chop into small pieces.
Using the leftover bacon fat, sauté onions and minced garlic until fragrant. Add heavy cream and bring to a gentle simmer. Stir in Parmesan cheese until the sauce thickens.
Add the cooked pasta, chicken, and bacon into the sauce. Toss everything together until well coated. Heat through before serving.
Garnish with fresh parsley or basil, and serve hot with garlic bread or a fresh salad.
Notes
For a lighter version, use half-and-half instead of heavy cream and turkey bacon instead of regular bacon. Add spinach, bell peppers, or zucchini for extra veggies.
