Instructions
Sauté ground beef, onion, and bell pepper over medium heat until the meat is fully cooked.
Add garlic, beef broth, diced tomatoes, salsa, and taco seasoning. Stir well.
Set the pot to High pressure and cook for 2 minutes. Once the cooking cycle is complete, allow the pressure to release naturally.
Slowly add softened cream cheese, heavy cream, and cheddar cheese to the pot. Stir until all the cheeses are melted and the soup is smooth and creamy.
Serve hot and garnish with your favorite taco toppings such as sour cream, avocado, fresh cilantro, or tortilla strips.
Notes
For a spicier version, add diced jalapeños or extra hot sauce. You can also customize by adding beans, corn, or extra vegetables.
