Ingredients

Meat

  • 2 lb ground beef

Vegetables

  • 1 small onion, diced
  • 1 medium bell pepper, diced any color will work well
  • 2 cloves garlic, minced

Broth and Tomatoes

  • 24 oz beef broth
  • 28 oz diced tomatoes crushed tomatoes or another kind will work too
  • 4 oz salsa

Seasonings

  • 2 packets taco seasoning store-bought

Dairy

  • 4 oz cream cheese, softened
  • 1 cup heavy cream
  • 2 cups cheddar cheese

Instructions

  • Sauté ground beef, onion, and bell pepper over medium heat until the meat is fully cooked.
  • Add garlic, beef broth, diced tomatoes, salsa, and taco seasoning. Stir well.
  • Set the pot to High pressure and cook for 2 minutes. Once the cooking cycle is complete, allow the pressure to release naturally.
  • Slowly add softened cream cheese, heavy cream, and cheddar cheese to the pot. Stir until all the cheeses are melted and the soup is smooth and creamy.
  • Serve hot and garnish with your favorite taco toppings such as sour cream, avocado, fresh cilantro, or tortilla strips.

Notes

For a spicier version, add diced jalapeños or extra hot sauce. You can also customize by adding beans, corn, or extra vegetables.
