Creamy Beef & Mushroom Rice Bake

Ingredients

Meat

  • 1 lb Ground Beef

Vegetables

  • 1 cup Chopped Mushrooms Fresh or canned
  • 1 small Onion, diced

Grains

  • 1 cup Uncooked White Rice

Canned Goods

  • 1 can Cream of Mushroom Soup (10.5 oz)
  • 2 cups Beef Broth

Dairy

  • 1/2 cup Sour Cream

Spices

  • 1 tsp Garlic Powder
  • to taste Salt and Pepper

Cheese

  • 1 cup Shredded Cheddar Cheese Optional, for topping

Instructions

  • Preheat your oven to 350°F (175°C).
  • Brown the ground beef in a large skillet over medium heat until cooked through and no longer pink, breaking it up as it cooks.
  • Add the diced onion and chopped mushrooms to the beef. Sauté together for about 5 minutes until the onions are translucent and mushrooms have softened.
  • Mix in the uncooked rice, cream of mushroom soup, beef broth, sour cream, garlic powder, salt, and pepper. Stir thoroughly to combine all ingredients evenly.
  • Transfer the mixture to a greased 9x13-inch baking dish and spread it out evenly.
  • If using, sprinkle the shredded cheddar cheese over the top for a cheesy crust.
  • Cover the dish tightly with foil and bake in the preheated oven for 35 minutes.
  • Remove the foil and bake for an additional 10 minutes to allow the cheese to brown and the topping to get bubbly.
  • Let it cool for a few minutes before serving to let the dish set slightly.

Notes

Store leftovers in an airtight container for up to 3 days. This bake freezes well for up to 3 months.
