  • 1 small cucumber, thinly sliced or julienned

  • 1/2 cup ranch dressing use your favorite brand or homemade

  • Salt and black pepper to taste

Instructions

  • Prepare the Vegetables: Shred your green cabbage into thin strips and toss into a large mixing bowl. Slice or julienne the cucumber into matchstick-sized pieces for extra crunch and toss them in with the cabbage.
  • Add Cheese and Bacon: Sprinkle the shredded cheddar cheese and bacon bits over the veggies, saving a few bacon bits for garnish if you wish.
  • Mix with Ranch: Drizzle the ranch dressing over the cabbage, cucumber, cheese, and bacon. Using a large spoon or spatula, gently mix everything together until the veggies are well coated. Be careful not to over-mix; you want the slaw to stay fluffy and crunchy.
  • Season: Taste the mixture and add salt and pepper as needed, keeping in mind that bacon and ranch already add flavor.
  • Assemble the Cups: Scoop generous spoonfuls of the creamy slaw into individual small cups or ramekins. If using for party appetizers, lettuce cups or mini tortilla boats work great too!
