4ozcream cheese, softened
1/4cuppowdered sugar
1tspvanilla extract
1cupblackberries
2tbspgranulated sugar
1tbsplemon juice
4largeeggs
1cupmilk
1/2tspground cinnamon
Butter or oil (for cooking)
Maple syrup (for serving)
Instructions
In a small saucepan, combine blackberries, granulated sugar, and lemon juice. Cook over medium heat until the mixture begins to bubble and thicken, about 5-7 minutes. Set aside.
In a bowl, blend softened cream cheese, powdered sugar, and vanilla extract until smooth and creamy.
Take two slices of thick-cut bread and spread a generous amount of the cream cheese mixture on one slice. Top with another slice to create a sandwich.
In a shallow dish, whisk together eggs, milk, and ground cinnamon.
Dip each sandwich into the egg mixture, ensuring both sides are well-coated.
In a skillet over medium heat, add butter or oil. Cook each sandwich for about 3-4 minutes per side, or until golden brown.
Once cooked, serve the French toast hot, drizzled with warm blackberry compote and a side of maple syrup.
Notes
Use thick, day-old bread for the best results. Feel free to experiment with different fruits for the compote.
