  • 1 package cream cheese, softened and cubed 8 oz package
  • 4 tablespoons butter
  • 1/3 cup milk
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1 bag frozen corn, thawed 18 oz bag
  • 1/4 teaspoon cayenne pepper optional
  • 1 cup sharp cheddar cheese, grated

Instructions

  • Preheat oven to 350°F (175°C). Grease a 2-quart baking dish.
  • In a medium pot over low heat, melt the cream cheese and butter together, stirring until smooth.
  • Add the milk and stir until the mixture is velvety and fully combined.
  • Season with salt, black pepper, and cayenne (if using). Fold in the thawed corn.
  • Transfer the creamy mixture to the greased baking dish.
  • Sprinkle grated cheddar evenly on top.
  • Bake for 20 minutes, or until the top is golden and bubbly.
  • Let cool slightly before serving and enjoy!

Notes

Substitute cheddar with pepper jack for a spicy kick. Be sure cream cheese is at room temperature for easier melting. Can be made a day in advance and stored in the fridge until ready to bake.
