  • 1/2 cup unsalted butter, softened
  • 1/2 cup granulated sugar
  • 1/2 cup light brown sugar
  • 1 large egg
  • 1 1/2 teaspoons vanilla extract
  • 1/2 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon salt
  • 3/4 teaspoon cinnamon
  • 3/4 cup all-purpose flour
  • 1 1/2 cups old fashioned oats
  • 3/4 cup white chocolate chips
  • 3/4 cup dried cranberries

Instructions

  • In a mixing bowl, cream butter and both sugars for 2-3 minutes until fluffy.
  • Add egg and vanilla, and mix until smooth.
  • Stir in baking powder, baking soda, salt, and cinnamon.
  • Add flour, then oats, mixing until just combined.
  • Fold in white chocolate chips and cranberries.
  • Cover and chill dough for 30–60 minutes.
  • Preheat oven to 350°F (175°C). Line a baking sheet with parchment.
  • Scoop dough onto the baking sheet, spacing 2-3 inches apart. Slightly flatten.
  • Bake for 10–12 minutes or until edges are golden.
  • Cool on pan 3–5 minutes, then transfer to a wire rack to cool completely.

Notes

Store in an airtight container for up to 7 days or freeze dough balls for up to 2 months. Bake from frozen with 1–2 extra minutes. Delicious warmed in the microwave for 10 seconds.
