Instructions
Heat olive oil in a large pot over medium heat. Add onion, celery, and carrot. Sauté for 5 minutes until softened.
Stir in garlic, tomato paste, paprika, cayenne pepper, salt, and black pepper. Cook for another 2 minutes.
Sprinkle in flour and stir constantly for 1 minute.
Gradually add seafood or chicken broth, stirring to prevent lumps. Simmer for 10 minutes.
Use an immersion blender to puree the soup until smooth (or blend in batches in a regular blender).
Stir in heavy cream and simmer gently for 10 more minutes, avoiding boiling.
Fold in crab meat, chopped shrimp, and sherry. Simmer for another 5 minutes.
Adjust seasoning if needed, garnish with fresh herbs, and serve hot.
Notes
For a spicier bisque, add extra cayenne pepper or diced jalapeños. Use lobster or scallops instead of shrimp for a luxurious twist. Store leftovers in the fridge for up to 3 days or freeze for 2 months.
