Crab Brulee Ingredients
1cupFresh crab meatA mix of lump and claw for the best texture.
1/2cupHeavy creamFor a luxurious feel.
2largeEgg yolksTo bind the mix and make it custard-like.
2tablespoonsButterFor cooking the crab and adding flavor.
1tablespoonGranulated sugarFor caramelizing the topping.
Instructions
Preheat your oven to 325°F (165°C). Line a baking dish or ramekins with coarse salt for the crab mixture.
Mix the crab meat with the heavy cream in a bowl.
Put the crab-cream mix into the dishes, but don’t fill them too much.
In another bowl, beat the egg yolks with a bit of sugar until they’re light and creamy.
Drizzle the egg yolk mix over the crab, making sure it covers evenly.
Bake the crab brulee for 20-25 minutes. It should be set around the edges and a bit jiggly in the middle.
Let the dishes cool a bit before adding a thin sugar layer on top.
Use a kitchen torch to caramelize the sugar until it’s golden-brown and crisp.
Notes
Serve with artisanal bread or crackers for guests to enjoy every bit. Pair it with a side salad or roasted veggies for a complete dish.
