Potato Ingredients
2cupsMashed PotatoesFresh or leftover
1cupShredded Cheddar Cheese
1/4cupChopped BaconOptional but recommended
Instructions
Preheat your oven to 350°F (175°C). Lightly grease a medium baking dish to prevent sticking.
In a large mixing bowl, combine the ground beef, breadcrumbs, egg, chopped onion, ketchup, Worcestershire sauce, salt, and pepper. Mix until just combined—try not to overwork the mixture for the juiciest result.
Press the meat mixture evenly into the prepared baking dish, smoothing the top. Bake in the preheated oven for 30 minutes, or until the meatloaf is cooked through and set.
Carefully remove the dish from the oven. Spread the mashed potatoes evenly over the cooked meatloaf layer.
Sprinkle the cheddar cheese over the mashed potatoes and top with chopped bacon, if using.
Return the casserole to the oven and bake for an additional 10-15 minutes, until the cheese is melted and bubbly, and everything is heated through.
Let cool for a few minutes before slicing and serving. Enjoy!
Notes
For extra creamy potatoes, mash them with a splash of warm milk and butter before spreading over the meatloaf. If you like a bit of heat, try stirring some diced jalapeños into your mashed potatoes for a Tex-Mex twist.
