  • 1 cup unsalted butter, softened
  • 1 cup granulated sugar
  • 1 cup packed brown sugar
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 2 cups all-purpose flour
  • 1 teaspoon baking soda
  • 1/2 teaspoon baking powder
  • 1/2 teaspoon salt
  • 2 cups rolled oats
  • 1 cup semi-sweet chocolate chips
  • 1 cup chopped pecans
  • 1/2 cup shredded coconut

Instructions

  • Preheat your oven to 350°F (175°C). Line baking sheets with parchment paper to prevent sticking.
  • In a large mixing bowl, cream together the softened butter, granulated sugar, and brown sugar until light and fluffy.
  • Beat in the eggs one at a time, then stir in the vanilla extract.
  • In another bowl, combine the flour, baking soda, baking powder, and salt. Gradually add this to the creamed mixture, mixing well after each addition.
  • Stir in the oats, chocolate chips, chopped pecans, and shredded coconut until everything is mixed nicely.
  • Drop rounded tablespoonfuls of the dough onto the prepared baking sheets, spaced a little apart.
  • Bake for 10-12 minutes or until the edges are golden brown.
  • Once done, remove from the oven and let the cookies cool on the baking sheet for 5 minutes before transferring them to a wire rack to cool completely.

Notes

Store cookies in an airtight container at room temperature for about a week. They can also be frozen for longer storage.
