Instructions
Preheat your oven to 350°F (175°C). Line baking sheets with parchment paper to prevent sticking.
In a large mixing bowl, cream together the softened butter, granulated sugar, and brown sugar until light and fluffy.
Beat in the eggs one at a time, then stir in the vanilla extract.
In another bowl, combine the flour, baking soda, baking powder, and salt. Gradually add this to the creamed mixture, mixing well after each addition.
Stir in the oats, chocolate chips, chopped pecans, and shredded coconut until everything is mixed nicely.
Drop rounded tablespoonfuls of the dough onto the prepared baking sheets, spaced a little apart.
Bake for 10-12 minutes or until the edges are golden brown.
Once done, remove from the oven and let the cookies cool on the baking sheet for 5 minutes before transferring them to a wire rack to cool completely.
Notes
Store cookies in an airtight container at room temperature for about a week. They can also be frozen for longer storage.
