Instructions
Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
In a large bowl, cream together the softened butter, granulated sugar, and brown sugar until fluffy and well-combined—about 2-3 minutes.
Beat in the eggs one at a time, adding the vanilla extract and mixing well after each addition.
In another bowl, whisk together the all-purpose flour, baking soda, and salt.
Gradually add the dry mixture to the creamed mixture, mixing until just combined.
Stir in the cotton candy flavoring and if you're using, fold in the mini marshmallows and a few drops of pastel food coloring to achieve your desired hue.
Using a cookie scoop, place rounded tablespoons of dough onto the prepared baking sheet, spacing them about 2 inches apart. Bake for 10-12 minutes until the edges are slightly golden.
