  • 1.5 cups Graham cracker crumbs
  • 0.25 cup Granulated sugar
  • 0.5 cup Unsalted butter, melted
  • 3 cups Cream cheese, softened (24 oz)
  • 0.75 cup Granulated sugar
  • 1 teaspoon Vanilla extract
  • 1 cup Heavy cream
  • to taste Cotton candy flavoring
  • optional Food coloring

Instructions

  • Preheat oven to 325°F (160°C). Line the bottom of a 9-inch springform pan with parchment paper.
  • Mix graham cracker crumbs, 1/4 cup sugar, and melted butter until evenly moistened. Press firmly into the bottom of the prepared pan.
  • Bake crust for 10 minutes. Let cool completely.
  • In a large bowl, beat cream cheese until smooth. Gradually add 3/4 cup sugar and vanilla extract, mixing until combined.
  • In a separate bowl, whip heavy cream to soft peaks. Gently fold into the cream cheese mixture.
  • Add cotton candy flavoring and food coloring as desired. Mix gently to combine.
  • Spread the filling evenly over the cooled crust. Smooth the top with a spatula.
  • Cover and refrigerate for at least 4 hours, preferably overnight.
  • Before serving, garnish with whipped cream and cotton candy fluff if desired. Slice and enjoy!

Adjust the cotton candy flavoring carefully—it's strong! Refrigerate overnight for best results. Garnish just before serving to maintain the fluffiness of the cotton candy.
