1/2cupshredded cheese (cheddar, mozzarella, or your favorite)
1/2cupdiced veggies (spinach, bell peppers, mushrooms, etc.)
Instructions
Preheat your oven to 350°F (175°C).
In a mixing bowl, whisk the eggs until well beaten.
Stir in the cottage cheese and shredded cheese until combined.
Add the diced veggies and mix well.
Grease a muffin tin with cooking spray or butter.
Pour the egg mixture evenly into each muffin cup, filling them about 3/4 full.
Bake for 20-25 minutes or until set and lightly golden.
