  • 6 large eggs
  • 1 cup cottage cheese
  • 1/2 cup shredded cheese (cheddar, mozzarella, or your favorite)
  • 1/2 cup diced veggies (spinach, bell peppers, mushrooms, etc.)

Instructions

  • Preheat your oven to 350°F (175°C).
  • In a mixing bowl, whisk the eggs until well beaten.
  • Stir in the cottage cheese and shredded cheese until combined.
  • Add the diced veggies and mix well.
  • Grease a muffin tin with cooking spray or butter.
  • Pour the egg mixture evenly into each muffin cup, filling them about 3/4 full.
  • Bake for 20-25 minutes or until set and lightly golden.
  • Let them cool for a few minutes before removing from the tin. Serve warm and enjoy!

Notes

Store in an airtight container in the fridge for up to 3 days or freeze for up to 2 months. Reheat in the microwave for 30 seconds or in the oven at 350°F (175°C) until warmed through.
