Instructions
Prepare the cottage cheese by ensuring it is smooth and creamy. If your cottage cheese is lumpy, pulse it briefly in a blender or food processor until mostly smooth, then measure 1 cup.
In a mixing bowl, combine cottage cheese, almond flour, honey or maple syrup, and vanilla extract. Stir gently until blended. Add the oat flour and a pinch of salt. Mix until a dough-like texture forms.
Fold in any optional add-ins like dark chocolate chips, chopped nuts, dried fruit, shredded coconut, or cinnamon. Mix evenly.
Shape the dough into balls using a small cookie scoop or your hands (about 1 tablespoon per ball). Place them on a baking sheet lined with parchment paper.
