  • ½ cup unsalted butter, softened
  • ½ teaspoon salt
  • cup brown sugar
  • 1 piece egg
  • 1 teaspoon vanilla extract
  • ½ cup all-purpose flour
  • 8 oz cream cheese, softened
  • cup granulated sugar
  • 1 teaspoon vanilla extract
  • 2 cups whipped cream
  • blue food coloring
  • crushed cookies for topping

Instructions

  • Preheat your oven to 350°F (175°C). Grease and line a 9-inch springform pan.
  • In a bowl, mix together the butter, brown sugar, and salt. Add the egg and vanilla extract, mixing well. Stir in the flour until smooth.
  • Press the cookie mixture evenly into the bottom of the springform pan. Bake for 10 minutes, then cool completely.
  • In another bowl, beat the softened cream cheese until smooth. Add granulated sugar and vanilla extract, mixing thoroughly.
  • Fold in 1 cup of whipped cream and a few drops of blue food coloring until fully combined.
  • Spread the cheesecake filling over the cooled crust. Smooth the top and refrigerate for at least 4 hours, or overnight.
  • Before serving, top with the remaining whipped cream and crushed cookies. Slice and enjoy!

Notes

Chill the cheesecake overnight for the best flavor. For extra texture, mix some whole cookies into the filling. You can also customize the food coloring for a different fun theme!
