  • 8 oz Cream cheese Softened
  • 1/2 cup Powdered sugar
  • 1 teaspoon Vanilla extract
  • 1 cup Whipped topping
  • 1 cup Strawberries Sliced
  • 1 cup Kiwi Peeled and sliced
  • 1 cup Blueberries
  • 1 cup Mandarin oranges Drained
  • 1/4 cup Shredded coconut Optional
  • to taste Mint leaves For garnish, optional

Instructions

  • Preheat your oven to 350°F (175°C). Roll out the sugar cookie dough onto a round pizza pan, pressing it evenly to the edges for a flat, uniform base. Bake for 12-15 minutes, or until slightly golden around the edges. Remove and let cool completely before adding toppings.
  • In a medium mixing bowl, beat together the softened cream cheese, powdered sugar, and vanilla extract until smooth and light. Fold in the whipped topping gently, mixing just until incorporated to keep it fluffy.
  • Once the cookie crust is cool, spread the cream cheese mixture evenly over the base, covering all the way to the edges like pizza sauce.
  • Arrange the sliced strawberries, kiwi, blueberries, and mandarin oranges over the creamy layer. Get creative—add them in circles, sections, or a rainbow pattern for extra visual appeal.
  • Sprinkle with shredded coconut if desired for a bit of texture and tropical flair. Top with a few mint leaves to add a fresh pop of color.
  • Refrigerate the pizza for at least 1 hour before slicing. This helps the flavors meld and the cream layer to set, making it easier to slice. Cut into wedges and enjoy immediately!

Notes

For the smoothest cream layer, make sure the cream cheese is fully softened before mixing. Feel free to swap in your favorite fruits. Store any leftover fruit pizza in an airtight container in the refrigerator for up to 3 days.
