Cookie Bar Base

  • 1 cup shredded coconut Use sweetened or unsweetened according to preference
  • 1 cup toffee bits Use classic English toffee bits for best crunch
  • 1 cup chocolate chips Can substitute with white chocolate or peanut butter chips
  • 1 cup all-purpose flour Can be substituted with gluten-free flour blend
  • 1 cup brown sugar Dark brown sugar gives richer flavor
  • 1/2 cup unsalted butter, melted
  • 1 large egg
  • 1 teaspoon vanilla extract
  • 1/2 teaspoon baking powder
  • 1/4 teaspoon salt

Instructions

Preparation

  • Preheat your oven to 350°F (180°C) and grease a 9×13-inch baking pan.
  • In a large mixing bowl, combine the melted butter and brown sugar. Stir until smooth and creamy.
  • Add the egg and vanilla extract to the bowl. Mix until fully incorporated.
  • Sprinkle in the flour, baking powder, and salt. Stir gently until just combined and no dry streaks remain.
  • Fold in the shredded coconut, toffee bits, and chocolate chips until evenly distributed.
  • Spread the cookie dough evenly in your prepared baking pan, smoothing the top.

Baking

  • Bake for 25–30 minutes until edges are golden brown and a toothpick inserted in the center comes out clean.
  • Allow the bars to cool completely in the pan before slicing into squares.

Serving

  • Serve and enjoy. These bars are best fresh, but they can be stored for a few days.

Notes

For best results, measure flour carefully and avoid overbaking. Can be paired with vanilla ice cream or served alongside coffee.
