  • 8 slices Rye bread, cubed
  • 1 pound Corned beef, thinly sliced or shredded
  • 1 can (14 ounces) Sauerkraut, drained and rinsed
  • 2 cups Swiss cheese, grated
  • 1 cup Thousand Island dressing

Instructions

  • Preheat your oven to 375°F (190°C). Lightly grease a 9×13-inch baking dish to prevent sticking.
  • Cube the rye bread into bite-sized pieces and layer half of them evenly in the bottom of the prepared baking dish.
  • Evenly lay half the corned beef over the bread layer, followed by half of the sauerkraut, and then half of the Swiss cheese.
  • Drizzle half of the Thousand Island dressing over this first layer.
  • Repeat the layers with the remaining bread, corned beef, sauerkraut, and Swiss cheese.
  • Finish by drizzling the rest of the Thousand Island dressing on top.
  • Lightly press the layers down with a spatula to compact slightly and ensure everything bakes together.
  • Cover the dish loosely with foil and bake for 20 minutes. Remove the foil and bake for another 10-15 minutes, or until the cheese is bubbly and lightly golden.
  • Let the bake rest for 10 minutes before serving. Slice into generous squares and savor that classic flavor!

Notes

For best flavor, use high-quality corned beef. You can substitute Swiss cheese with Gruyere or mild provolone if desired.
