Instructions
In a large pot, heat olive oil over medium heat.
Add chopped bacon and cook until crisp. Remove and set aside.
Season the beef with salt and pepper, then brown in the same pot in batches. Remove and set aside.
In the same pot, add onion, carrots, and garlic. Cook until onion is translucent.
Sprinkle flour over the vegetables and stir to coat, scraping the bottom of the pot.
Return the beef and bacon to the pot.
Add tomato paste, bouquet garni, and beef broth.
Bring to a boil, then reduce to a simmer and cover. Cook for about 2 hours.
In a separate pan, sauté mushrooms in a bit of oil until golden.
Add the mushrooms to the stew in the last 30 minutes of cooking.
Serve hot with crusty bread and fresh parsley on top.
Notes
For enhanced flavor, add 1 cup of red wine along with the broth. This stew tastes even better the next day, making it perfect for meal prep.
