Instructions
Preheat your oven to 350°F (175°C). Line two baking sheets with parchment paper.
Cream together the softened butter and cream cheese until light and fluffy, about 2 minutes. Add the powdered sugar and mix until fully combined.
Beat in the egg, vanilla bean paste or extract, and a pinch of kosher salt until smooth.
Sprinkle in the baking powder. Gradually add the flour, mixing just until the dough comes together.
In a small bowl, combine the granulated sugar and ground cinnamon. Scoop the dough into 1-inch balls, then roll each one in the cinnamon-sugar mixture to coat.
Place the coated dough balls onto the prepared baking sheets, about 2 inches apart. Gently flatten each ball with the bottom of a glass.
Bake for 10-12 minutes, or until the edges are just beginning to turn golden. Let cool on the baking sheet for 3 minutes before transferring to a wire rack.
