Instructions
Preheat the oven to 350°F. Grease a 9-inch round cake pan with cooking spray.
In a large bowl, beat the softened butter, sugar, and dark brown sugar with an electric mixer on medium speed until light and fluffy.
Add eggs one at a time, mixing well after each addition.
Stir in the vanilla extract.
In a separate bowl, whisk together the flour, baking soda, cinnamon, and salt.
Gradually mix the dry ingredients into the wet ingredients until combined.
Fold in the chopped apples and walnuts.
Spoon the batter into the prepared cake pan and spread evenly.
Bake for 40-45 minutes or until a toothpick inserted into the center comes out clean.
Let the cake cool for about 10-15 minutes before slicing.
Serve warm, optionally topped with ice cream.
