Instructions
In a large bowl, whisk together eggs, whole milk, sugar, and vanilla extract.
Spread churro filling on four slices of brioche bread.
Top with the remaining slices to create sandwiches.
Dip each sandwich into the egg mixture, coating both sides.
In a shallow dish, mix granulated sugar and cinnamon.
Preheat a skillet over medium heat and add butter.
Cook each sandwich for 3-4 minutes on each side until golden brown.
