Instructions
In a large bowl, cream together the softened butter and powdered sugar until smooth.
Mix in the vanilla extract.
Gradually add the flour and salt, mixing until everything is combined.
Fold in the chopped cherries and, if you like, the mini chocolate chips.
Wrap the dough in plastic wrap and chill for at least 1 hour.
Preheat your oven to 325°F (165°C).
Roll the dough into 1-inch balls and place them on parchment-lined baking sheets.
Press down slightly on each ball with the bottom of a glass.
Bake for 14-16 minutes, or until the edges are slightly golden.
Remove from the oven and let cool slightly, then dust with powdered sugar while still warm.
Notes
Store cookies in an airtight container at room temperature for up to a week.
