Instructions
Preheat your oven to 350°F (175°C) and line two baking sheets with parchment paper.
In a large mixing bowl, cream together the softened butter, brown sugar, and granulated sugar until light and fluffy, about 2-3 minutes. Add in the eggs, one at a time, mixing well after each addition, then stir in the vanilla extract.
In a separate bowl, whisk together the all-purpose flour, unsweetened cocoa powder, baking soda, and salt.
Gradually blend the dry ingredients into the wet mixture until just combined. Avoid overmixing.
Fold in the semisweet chocolate chips and chopped pecans, ensuring they are evenly distributed.
In a small microwave-safe bowl, add the soft caramel candies with 2 tablespoons of milk. Microwave in 20-second intervals, stirring in between, until the caramels are completely melted and smooth.
Scoop about 2 tablespoons of cookie dough per cookie. Flatten each slightly in your hand, add a small spoonful of melted caramel to the center, then fold dough around the caramel to seal. Roll into a ball and place on the baking sheet, spacing about 2 inches apart.
Sprinkle a pinch of sea salt on top of each cookie dough ball for an added flavor boost.
Bake for 10-12 minutes, or until the cookies are set around the edges but still soft in the middle. Let them cool on the baking sheet for 5 minutes before transferring to a wire rack.
