  • 1/2 cup Granulated Sugar

  • 2 teaspoons Vanilla Extract

  • 1 teaspoon Baking Soda
  • 1/2 teaspoon Salt
  • 1 1/2 cups Semisweet Chocolate Chips
  • 1 cup Chopped Pecans
  • 20-24 pieces Soft Caramel Candies
  • 2 tablespoons Milk
  • Sea Salt for sprinkling

Instructions

  • Preheat your oven to 350°F (175°C) and line two baking sheets with parchment paper.
  • In a large mixing bowl, cream together the softened butter, brown sugar, and granulated sugar until light and fluffy, about 2-3 minutes. Add in the eggs, one at a time, mixing well after each addition, then stir in the vanilla extract.
  • In a separate bowl, whisk together the all-purpose flour, unsweetened cocoa powder, baking soda, and salt.
  • Gradually blend the dry ingredients into the wet mixture until just combined. Avoid overmixing.
  • Fold in the semisweet chocolate chips and chopped pecans, ensuring they are evenly distributed.
  • In a small microwave-safe bowl, add the soft caramel candies with 2 tablespoons of milk. Microwave in 20-second intervals, stirring in between, until the caramels are completely melted and smooth.
  • Scoop about 2 tablespoons of cookie dough per cookie. Flatten each slightly in your hand, add a small spoonful of melted caramel to the center, then fold dough around the caramel to seal. Roll into a ball and place on the baking sheet, spacing about 2 inches apart.
  • Sprinkle a pinch of sea salt on top of each cookie dough ball for an added flavor boost.
  • Bake for 10-12 minutes, or until the cookies are set around the edges but still soft in the middle. Let them cool on the baking sheet for 5 minutes before transferring to a wire rack.
  • Enjoy warm with your favorite drink, or let them cool for storage!

Notes
