Instructions
Preheat your oven to 350°F (175°C) and line two baking sheets with parchment paper or silicone mats.
In a large bowl, beat the softened butter, brown sugar, and granulated sugar together until light and fluffy.
Add the eggs, one at a time, mixing well after each addition. Stir in the vanilla extract until combined.
In a separate bowl, whisk together the all-purpose flour, unsweetened cocoa powder, baking soda, and salt. Gradually add these dry ingredients to your wet mixture, mixing until just combined.
Gently fold in 1 1/2 cups of M&M’s, saving a handful for pressing on top of the cookies.
Scoop tablespoon-sized balls of dough onto your prepared baking sheets, leaving about 2 inches between each.
Press a few more M&M’s onto the top of each dough ball.
Bake for 10–12 minutes, or until the edges are set but the centers still look soft.
Remove from the oven and let the cookies cool on the baking sheets for 5 minutes before transferring them to wire racks to cool completely.
Once cool, drizzle the melted chocolate chips over the cookies.
