Equipment

  • Mixing Bowl
  • Spoon or Spatula

Ingredients

Ingredients

  • 1 cup Rolled Oats
  • 1/2 cup Unsweetened Peanut Butter
  • 1/4 cup Honey or Maple Syrup
  • 1/4 cup Mini Chocolate Chips
  • 1 teaspoon Vanilla Extract
  • a pinch Salt

Instructions

  • In a large mixing bowl, combine the rolled oats, peanut butter, honey (or maple syrup), mini chocolate chips, vanilla extract, and a pinch of salt.
  • Stir everything together with a sturdy spoon or spatula until the mixture is well-combined. It should be thick and slightly sticky.
  • If the mixture seems too loose, pop the bowl in the fridge for 10 minutes—this makes rolling even easier.
  • Using your hands (or a small cookie scoop), roll the dough into 1-inch balls. Place them on a plate or lined baking sheet.
  • Chill the energy bites in the refrigerator for at least 15 minutes to firm up.
  • Enjoy immediately, or store for later snacking!

Notes

Store in an airtight container in the refrigerator for up to one week, or freeze for longer storage.
