Instructions
In a large mixing bowl, combine the rolled oats, peanut butter, honey (or maple syrup), mini chocolate chips, vanilla extract, and a pinch of salt.
Stir everything together with a sturdy spoon or spatula until the mixture is well-combined. It should be thick and slightly sticky.
If the mixture seems too loose, pop the bowl in the fridge for 10 minutes—this makes rolling even easier.
Using your hands (or a small cookie scoop), roll the dough into 1-inch balls. Place them on a plate or lined baking sheet.
Chill the energy bites in the refrigerator for at least 15 minutes to firm up.
