Ingredients

Crust

  • 1 cup all-purpose flour
  • 1 cup chopped pecans
  • 1/2 cup softened margarine or butter

Layers

  • 8 oz cream cheese, softened
  • 1 cup confectioners' sugar
  • 1 1/2 cups Cool Whip (plus more for topping)
  • 2 packages instant chocolate pudding mix (4 oz each)
  • 3 cups cold milk
  • Additional chopped pecans for garnish

Instructions

  • Preheat oven to 350°F.
  • Mix flour, chopped pecans, and softened margarine until well combined. Press into the bottom of a 9x13-inch baking dish.
  • Bake for 20 minutes, then cool completely.
  • In a medium bowl, beat cream cheese and confectioners' sugar until smooth. Fold in 1 1/2 cups Cool Whip. Spread evenly over cooled crust.
  • In a separate bowl, whisk together chocolate pudding mix and cold milk until thickened. Spread over the cream cheese layer.
  • Top with additional Cool Whip and sprinkle with chopped pecans.
  • Refrigerate for at least 2 hours before serving.

Notes

Try substituting vanilla or butterscotch pudding for different flavor variations. Let the dessert chill overnight for the best texture and clean slices.
