  • 4 cups Unsweetened Shredded Coconut
  • 1/2 cup Coconut Oil, melted
  • 3/4 cup Maple Syrup
  • 1 cup Chocolate (semisweet or dark, chopped or chips)

Instructions

  • Start by lining an 8x8 inch baking dish with parchment paper.
  • In a large mixing bowl, combine the shredded coconut, melted coconut oil, and maple syrup. Stir until the mixture is thick and everything is well coated.
  • Pour the coconut mixture into your prepared baking dish. Use a spatula or the back of a spoon to press the mixture down firmly and evenly.
  • Pop the baking dish into the fridge for about 15-20 minutes to firm up the coconut layer.
  • While the base chills, melt your chocolate in a microwave-safe bowl or using a double boiler.
  • Pour the melted chocolate over the chilled coconut layer and spread it evenly to the edges.
  • Return the dish to the fridge for at least 1 hour until the chocolate sets completely.
  • Once set, remove the bars from the dish using the parchment paper and slice them into squares or bars.
  • Enjoy straight from the fridge or let sit at room temperature for a softer bite.

Notes

Store in an airtight container in the fridge for up to a week. These bars taste even better after a day or two!
