Instructions
Start by lining an 8x8 inch baking dish with parchment paper.
In a large mixing bowl, combine the shredded coconut, melted coconut oil, and maple syrup. Stir until the mixture is thick and everything is well coated.
Pour the coconut mixture into your prepared baking dish. Use a spatula or the back of a spoon to press the mixture down firmly and evenly.
Pop the baking dish into the fridge for about 15-20 minutes to firm up the coconut layer.
While the base chills, melt your chocolate in a microwave-safe bowl or using a double boiler.
Pour the melted chocolate over the chilled coconut layer and spread it evenly to the edges.
Return the dish to the fridge for at least 1 hour until the chocolate sets completely.
Once set, remove the bars from the dish using the parchment paper and slice them into squares or bars.
