Ingredients

Dry Ingredients

  • 1 cup all-purpose flour
  • 1 cup granulated sugar
  • 3/4 cup unsweetened cocoa powder
  • 1 tsp baking powder
  • 1/2 tsp salt

Wet Ingredients

  • 1/2 cup butter, softened
  • 1/2 cup milk
  • 3 large eggs

Mousse Ingredients

  • 1 cup heavy cream
  • 1/2 cup powdered sugar
  • 1 tsp vanilla extract
  • 4 oz semi-sweet chocolate, melted

Instructions

  • Preheat oven to 350°F (175°C). Grease and flour two 9-inch round cake pans.
  • Cream together butter and sugar until light and fluffy. Add eggs one at a time, beating well.
  • In a separate bowl, whisk together flour, cocoa powder, baking powder, and salt.
  • Gradually mix dry ingredients into wet mixture, alternating with milk, until just combined.
  • Divide batter evenly between prepared pans and bake for 30–35 minutes, until a toothpick inserted in the center comes out clean.
  • Cool cakes in pans for 10 minutes, then transfer to a wire rack to cool completely.
  • In a large bowl, whip heavy cream until soft peaks form. Gradually add powdered sugar and vanilla, then whip to stiff peaks.
  • Gently fold melted chocolate into whipped cream until smooth. Chill mousse for 30 minutes.
  • Place one cake layer on a serving platter, spread mousse over it, then top with the second cake layer.
  • Frost top and sides with remaining mousse and garnish as desired.

Notes

Make sure butter is softened for easy mixing. Don’t overmix the batter to keep the cake light. Let the cake cool completely before adding mousse.
