Ingredients

Dry Ingredients

  • 1.75 cups all-purpose flour
  • 0.75 cup unsweetened cocoa powder
  • 1.5 tsp baking powder
  • 1.5 tsp baking soda
  • 1 tsp salt

Wet Ingredients

  • 2 cups granulated sugar
  • 2 large eggs
  • 1 cup whole milk
  • 0.5 cup vegetable oil
  • 2 tsp vanilla extract
  • 1 cup boiling water

Ice Cream Layer

  • 1 pint chocolate ice cream (softened slightly)

Ganache

  • 1 cup semi-sweet chocolate chips
  • 0.5 cup heavy cream

Toppings

  • 1 cup mini chocolate chips
  • 1 cup crushed Oreos
  • 0.5 cup chopped chocolate candy bars (like Snickers or Twix)
  • to taste chocolate sauce (for drizzling)

Instructions

  • Preheat oven to 350°F (175°C). Grease and line two 9-inch round cake pans with parchment paper.
  • Sift together flour, cocoa powder, baking powder, baking soda, and salt.
  • In a large bowl, mix sugar, eggs, milk, oil, and vanilla extract until smooth. Stir in boiling water.
  • Divide batter evenly between pans and bake for 30–35 minutes. Let cool completely.
  • Line a 9-inch pan with plastic wrap. Spread softened chocolate ice cream evenly into the pan and freeze until solid (2–3 hours).
  • In a saucepan, heat heavy cream over medium heat until just simmering. Pour over chocolate chips, let sit for 2–3 minutes, then whisk until smooth.
  • Assemble the cake: Place one cake layer on a serving plate, spread a thin layer of ganache on top. Remove ice cream layer from its pan and place on top. Add second cake layer and pour remaining ganache over cake.
  • Sprinkle mini chocolate chips, crushed Oreos, and chopped candy bars over the top. Drizzle with chocolate sauce.
  • Freeze for at least 1 hour before serving. Slice and enjoy!

Notes

Use high-quality cocoa powder for best flavor. Freeze ice cream layer solid before assembling. Store leftovers in an airtight container in the freezer for up to 2 months. Thaw in the fridge before serving.
