Instructions
In a bowl, combine olive oil, minced garlic, lime juice, chipotle powder, paprika, cumin, salt, and pepper. Coat the chicken and marinate for 10-15 minutes.
Grill the chicken over medium-high heat for 5-7 minutes per side until fully cooked. Let it rest, then slice into strips.
Mix ranch dressing with minced chipotle peppers and garlic powder to create a creamy chipotle ranch sauce.
Warm tortillas and layer rice (optional), grilled chicken, chipotle ranch sauce, diced tomatoes, red onions, cilantro, jalapeños, lettuce, shredded cheese, and avocado or guacamole.
