Ingredients

Chicken

  • 2 pieces chicken breasts or thighs

Marinade

  • 2 tablespoons olive oil
  • 2 cloves garlic, minced
  • 1 piece lime, juiced
  • 1-2 teaspoons chipotle chili powder or adobo sauce
  • 1 teaspoon paprika
  • 1 teaspoon cumin
  • to taste salt and pepper

Sauce

  • ½ cup ranch dressing
  • 1-2 pieces chipotle peppers in adobo sauce, minced
  • 1 teaspoon garlic powder

Toppings

  • 1 cup fresh tomatoes, diced
  • ½ cup red onion, diced
  • ¼ cup fresh cilantro, chopped
  • 1 piece jalapeño or green chili, sliced (optional)
  • 1 cup lettuce or spinach (optional)
  • 1 cup shredded cheese (cheddar or pepper jack)
  • 1 piece avocado or guacamole (optional)
  • 2 cups cooked rice (optional)

Instructions

  • In a bowl, combine olive oil, minced garlic, lime juice, chipotle powder, paprika, cumin, salt, and pepper. Coat the chicken and marinate for 10-15 minutes.
  • Grill the chicken over medium-high heat for 5-7 minutes per side until fully cooked. Let it rest, then slice into strips.
  • Mix ranch dressing with minced chipotle peppers and garlic powder to create a creamy chipotle ranch sauce.
  • Warm tortillas and layer rice (optional), grilled chicken, chipotle ranch sauce, diced tomatoes, red onions, cilantro, jalapeños, lettuce, shredded cheese, and avocado or guacamole.
  • Roll the tortillas into burritos, slice, and serve immediately.

Notes

For extra flavor, toast the burritos in a hot skillet after wrapping. Adjust the spiciness by using more or less chipotle to suit your taste.
