Ingredients

  • 2 tablespoons Butter
  • 1 Onion finely chopped
  • 1 pound Chicken Breasts cut into strips
  • Salt and Pepper to taste
  • 2 cups Mushrooms sliced
  • 2 cloves Garlic minced
  • 1 tablespoon All-Purpose Flour
  • 2 cups Beef Broth
  • 1 cup Sour Cream
  • 2 teaspoons Dijon Mustard
  • Fresh Parsley chopped, for garnish
  • Cooked Egg Noodles for serving

Instructions

  • Melt the butter in a large skillet over medium heat.
  • Add the chopped onion and sauté until soft.
  • Season the chicken strips with salt and pepper. Add them to the skillet and cook until browned on all sides.
  • Add the sliced mushrooms and minced garlic. Cook for a few minutes, until the mushrooms are soft.
  • Sprinkle the flour over the chicken and mushrooms. Stir to coat and cook for another minute.
  • Pour in the beef broth and bring it to a simmer. Let it cook for about 5 minutes, or until the sauce thickens.
  • Reduce the heat to low and stir in the sour cream and Dijon mustard. Cook gently until the sauce is hot but not boiling.
  • Serve over cooked egg noodles, garnished with chopped parsley.

Notes

Make sure your chicken is cut into even strips for even cooking. For extra flavor, you can add a splash of white wine to the sauce as it simmers. If you like a thicker sauce, add a little more flour or let it simmer longer.
