Instructions
Melt the butter in a large skillet over medium heat.
Add the chopped onion and sauté until soft.
Season the chicken strips with salt and pepper. Add them to the skillet and cook until browned on all sides.
Add the sliced mushrooms and minced garlic. Cook for a few minutes, until the mushrooms are soft.
Sprinkle the flour over the chicken and mushrooms. Stir to coat and cook for another minute.
Pour in the beef broth and bring it to a simmer. Let it cook for about 5 minutes, or until the sauce thickens.
Reduce the heat to low and stir in the sour cream and Dijon mustard. Cook gently until the sauce is hot but not boiling.
Serve over cooked egg noodles, garnished with chopped parsley.
Notes
Make sure your chicken is cut into even strips for even cooking. For extra flavor, you can add a splash of white wine to the sauce as it simmers. If you like a thicker sauce, add a little more flour or let it simmer longer.
