Preheat your oven to 375°F (190°C) to ensure it’s nice and hot for the dish.
In a large bowl, toss your chicken pieces with olive oil, pepper, and herb and garlic seasoning until they are thoroughly coated.
In a large skillet, heat a splash of olive oil over medium heat. Add the sliced mushrooms and let them cook until they release their moisture and start to brown—this should take about 5 minutes. Add the minced garlic and continue cooking for another minute until fragrant.
In a large baking dish, layer half of the chicken pieces at the bottom, followed by half of your sautéed mushrooms, half of the fresh spinach, and half of the grated cheddar cheese (if using). Repeat the layers until everything is nicely stacked.
Cover the dish with aluminum foil and pop it into the oven for about 20-25 minutes. After that, remove the foil and let it bake for another 5-10 minutes, or until the chicken is fully cooked and the top is lightly golden.
Plate up warm, garnished with freshly chopped parsley and a sprinkle of cheddar cheese if you like!
